Nettle noodles with wild garlic and garlic mustard.

Ingredients

  • Ingredients:
  • 1 cup stinging nettle tips, blanched and chopped
  • 1 cup ramsons (wild garlic leaves), chopped
  • 1 cup Jack-by-the-hedge (garlic mustard fresh new stems, flower buds and leaves), chopped
  • 1 nest of whole wheat noodles
  • 1 tbsp vegetable oil
  • 1 tsp toasted sesame oil
  • Salt and freshly ground black pepper to taste

Instructions:

  • 1. Start by blanching the stinging nettle tips in a pot of boiling water for 2-3 minutes, then drain and chop them finely.. in a large pan, heat the vegetable oil over medium heat. Add the chopped ramsons and garlic mustard and sauté for 2-3 minutes until softened.
  • 3. Add the chopped nettle tips to the pan and cook for another 1-2 minutes.
  • 4. Cook the whole wheat noodles according to the package instructions until al dente. Drain and set aside.
  • 5. Add the cooked noodles to the pan with the nettle and garlic mixture, and toss everything together until the noodles are coated evenly.
  • 6. Dizzle the toasted sesame oil over the noodles and season with salt and freshly ground black pepper to taste.
  • 7. Serve the nettle noodles hot and enjoy!

Note: Be careful when handling stinging nettles as they can cause a mild skin irritation. Use gloves or tongs when washing and chopping the nettles.
