Makes 4 kidney bean and spinach vegeburgers.
1/2 cup sage and onion stuffing mix
1 slice wholemeal bread
1 cup tinned kidney beans
1 cup chopped spinach
1/2 cup wholemeal flour
Water
Frying oil
4 multi-grain baps
Young spinach leaves
Tomato sauce
1. Put stuffing mix and bread chopped into cubes in a bowl, cover in boiling water and leave to stand for a few minutes till cool and water absorbed.
2. Add beans, spinach and flour to make a sticky dough.
3. Spoon and shape 4 portions of the mix into a large frying pan heated with a little oil and cook on a moderate heat for about 10 minutes, turning a few times till nicely browned.
4. Serve in multi grain baps with young spinach leaves, and tomato sauce.
