Describe your perfect birthday cake.

A couple of years ago I took up the vegan diet for veganuary and learned new ways of cooking.

Here’s an easy to make vegan birthday cake!

If you are an adventurous cake baker and into wholefoods like me try wholemeal self-raising flour, brown sugar and chocolate sprinkles.

Conversions are not 100% accurate, just a guide as looking to proportion and consistency comes naturally with a bit of practice.

Perfect Vegan Birthday Cake

Ingredients

  • 350g/12 oz/1½ cups self-raising flour
  • 250ml/8fl oz/1 cup soya milk
  • 175g/6oz/¾ cup unsalted vegan butter 
  • 125g/4oz/½ cup sugar
  • 125g/4oz/½ cup stewed apple
  • 1 tsp vanilla extract
  • 1 tsp vinegar
  • ¼ tsp salt

Vegan Buttercream Icing

  • 1kg/2lb/4 cups powdered sugar
  • 250g/8oz/1 cup unsalted vegan butter 
  • 1 tsp vanilla extract
  • 1 tbsp coconut milk or cream
  • Magic rainbow sprinkles

Method

  • Preheat the oven to180°c/350°F/gas mark 4, and grease two 6-inch round cake pans.
  • In a large bowl, cream together the sugar and butter. Add the stewed apple and vanilla, and mix well.
  • In a large bowl, combine the flour and salt.
  • Add in the milk and vinegar.
  • Add the wet ingredients to the dry ingredients and mix well.
  • Place two cake pans on a baking sheet, then divide the batter evenly between them.
  • Bake for about 40 minutes or until a toothpick comes out clean.
  • Set the cakes aside to cool and make the icing.

Vegan Buttercream Icing

In a large bowl cream together the butter, vanilla, and milk. Add the icing sugar a little at a time until thoroughly mixed.

Putting it all together

  • Once the cakes are completely cool, remove the first one from the pan, set it on a cake board, and put a thick layer of icing on the top.
  • Place the second cake on top of the first cake, then ice the entire cake. 
  • Decorate with sprinkles… and candles!

  1. Hello! I’m vegan too, and last week made a vegan blackberry “cheese” cake! It was delicious. Even my brother-in-law enjoyed it and he’s not a fan of healthy foods 🙂

    • Ooh, that sounds delicious! I was out blackberry picking yesterday, there are so many of them here just ripened. My daughter made some bramble jelly and we were talking about other ways to preserve them.
