• Stir in the vanilla extract.

• Pour the wet mixture over the dry ingredients and mix well with a wooden spoon or a spatula until a sticky dough forms.

• Divide the dough into 16 equal portions and roll each one into a ball. Place them on the prepared baking trays, leaving some space between them as they will spread slightly during baking.

• Flatten each ball slightly with your palm or the back of a spoon.

• Bake for 12 to 15 minutes or until golden and crisp on the edges.

• Let the biscuits cool on the trays for 10 minutes before transferring them to a wire rack to cool completely.

• Enjoy your golden vegan oatmeal crunchy biscuits with a cup of tea or coffee, or store them in an airtight container for up to a week.
