Dandelion honey, a treat divine
A taste of summer, now it's time.
Ingredients:
2 cups of dandelion petals
4 cups of water
4 cups of sugar
1 lemon, sliced
1 pinch of salt
Instructions:
1. Start by harvesting fresh dandelion heads. Make sure to separate the petals from the stem.
2. Rinse the petals thoroughly, and remove any insects or debris.
3. In a large pot, bring the water to a simmer. Add the dandelion petals, sliced lemon, and salt. Stir well.
4. Let the mixture simmer for 1 hour, stirring occasionally.
5. After an hour, strain the mixture through cheesecloth or a fine mesh strainer. Press on the petals to extract all of the liquid.
6. Return the liquid to the pot and add the sugar. Stir well until the sugar has dissolved.
7. Increase the heat to medium and let the mixture simmer for another hour, stirring occasionally.
8. Once the mixture has thickened, remove it from the heat.
9. Let the mixture cool to room temperature, then transfer it to a jar or container with a tight-fitting lid.
10. Store dandelion honey in a cool, dark place for up to 6 months.
