Chocolate-cherry sponge with custard.
This is a vegan, sugar free, delicious and easy dessert that you can make in a microwave oven in minutes with simple ingredients.
You will need:
- 4 tbsp soya milk
- 1 thin slice of lemon finely chopped
- 1 tbsp vegetable oil
- 3 tbsp self-raising flour (white or wholemeal is more wholesome)
- 1 tbsp sugar-free sweetener (soft brown stevia leaf)
- 1 pinch baking powder
- 2 tsp cocoa powder
- 2 tbsp frozen black cherries
Vegan custard to serve:
- 2 tsp custard powder
- 1 tsp sweetener (soft brown stevia leaf)
- 1/2 mug soya milk
To make the pudding, follow these steps:
- In a microwaveable tea or coffe mug, stir together the chopped lemon and soya milk. Mix in the vegetable oil.
- Add the flour, sweetener, baking powder and cocoa powder.
- Stir with a butter knife form a smooth batter.
- Gently fold in the cherries.
- Microwave on high for 2 minutes or until the sponge is light and springy to the touch.
- Let it stand whilst making the custard.
To make the custard, follow these steps:
- Mix custard powder and sweetener in another mug with a little of the soya milk until smooth.
- Top up with the rest of the soya milk to half a mug, stir well.
- Microwave on full power for 1 minute 30 seconds, stir then microwave for another 30 seconds and stir again.
Turn the pudding out onto a plate, cut in half for two portions to serve with the vegan custard.
